Super Quick Pecan Pesto Pasta

Pasta is an absolute staple in my diet as it can so easily made into a nutritious meal with a quick easy sauce such as this creamy and refreshing pesto.

Ingredients for 4

  • 150ml yogurt
  • 100g pecan nuts
  • 1 tsp garlic powder
  • handful of basil
  • 100g spinach
  • 120ml olive oil
  • Pinch of salt
  • 1 tbsp of nutritional yeast (optional)
  • Juice of half a lemon
  • Drizzle of honey

Method

  1. Pre heat the oven to 180 degrees Celsius and toast the pecan nuts for 5 minutes or until they start to turn a deep brown colour

  2. To prepare the pesto, combine all the ingredients in a blender until you get a smooth thick sauce, it’s that simple!

To Serve

Serve with a pasta of your choice! (Wholegrain is a good option to increase your fibre intake).

I recommend serving with some toasted pine nuts and vine tomatoes or some grated Parmesan! Enjoy!
