This pancake recipe is as simple as they come and absolutely worth your time if you’re feeling like a Sunday morning pick me up!
Ingredients for 2
- 2 ripe bananas
- 2 eggs
- 6 tbsp of wholemeal or buckwheat flour
- 1 tsp of cinnamon (optional)
Method
- Mash the two bananas in a large bowl with a fork.
- Whisk the eggs in a separate bowl and then combine with the banana. Following this add in your flour (and cinnamon if using) and fold all these ingredients together to make your batter.
- Add a small knob of butter or a drop of oil to a hot non-stick frying pan set over a medium heat. Pour in about an eight of the batter using a ladle if you have one and cook until air bubbles start to appear in the pancake, or the edges start to brown. Flip the pancake and cook for 3 minutes on the other side until browned.
- Keep the pancakes warm while you assemble all your favourite toppings, I personally enjoy mine with live natural yogurt, cacao nibs and frozen berries!
